on what mode should i be shooiting on and hwo to change it for different shots?

shutter priority or manual...is that what your asking?

Yea i just have no control over it really just wanting to have full control of shutter as i dont .. maybe get that shutter release cable tht might be easier for me?

Change it to shutter priority on the dial mode dial, then use the side dial to turn it up or down. If by full control you mean "you control when it opens, and you control when it shuts" then you want Bulb mode, which is right at the end of the dial. After going past a 30 second exposure, the next option will be bulb.
